Best question ever.
...and I don't know. What does hockey fighting consist of besides pulling your opponents jersey over his head, jerking his head down, and pummeling his sides with your fists?

I would think combat sambo, because they allow handles with the gi and striking. But you would have to fight with rollerblades on or something to get the full effect.

Can't kick 'em in the face because of the blades.
Of course if they allowed that.....

stiff arming is a legitiment defense to a throw. you can stiff arm, you just cant do it the whole match. but I would say watching the guys go at it, that they are just boxing. yea they are pulling jerseys etc. . . but they aren't throwing or choking or armbaring they're just punching

basically, you're talking combatives for field hockey, lacrosse, and the like.
This means, first, you need to understand combat with a stick. None of the MAs I know really teach decent combat with a stick. Yeah, some might have you swing a bo staff around, or kendo with a stick over your head, but that doesn't teach you squat about how a stick really gets used in combat - slashing, tripping, and all those wonderful things.
Then, you need to understand combatives against a stick when you yourself are unarmed. Judo.
Then, you need combatives with both unarmed. Judo. Throw in a bit of dirty boxing.

do they do a lot of hockey fighting in combat sambo?
like would you see people just grab and then wail to score points
if would seem like an effective method to score points in sambo, and if you were losing the exchange you could take him down

You realy need to learn to 'masticate' more. Great fun and occupies those idle times when you could go and ask a realy stupid question, not that you'd do that.

Just pure aggression! It's more of a sloppy street fight style. Don't get me wrong they are tough but it doesn't seem like they're using their energy the efficiently.

if you want to learn stick fighting, then look into arnis/escrima or other types of fillipino martial arts.
We had a guy come to our jiu jitsu club to learn techniques for his lacrosse game.
reminds me of the old saying "...so i was at the fights when a hockey game broke out!" :)
